The biggest issue is that our food has changed, and no one realizes. You really need to keep up with the changes. And the other big thing I see is misinformation. There's so much out there that people aren't able to make proper decisions. They think there's nothing better to do for themselves. A lot of the healthy practices you advocate for, including eating raw, are still considered "alternative" or outside of the mainstream. Do think people are changing their minds at all about the value of the practices coming out of that world? I think what's happening is they're looking at people [who are raw] and going "They don't get sick, they're always so happy. Why can't I be that way? " People used to be like, "Raw?! " and look at me like I was some alien being. Then more [chefs] started making raw food and selling raw snacks, and it's changing a lot. You can get everything raw now. —Lisa Elaine Held For more information, visit Our editors independently select these products. Making a purchase through our links may earn Well+Good a commission.

This is about abundance! Quite a change from 17 years ago! At the beginning, I was like a voice in the wind. It was like a hurricane and I was shouting against it, "Eat raw, eat raw, " and now I'm thinking I have so many interesting people I can bring onto the show who all say the same thing: it all goes back to diet. It all goes back to what you eat. (Source: Jimmy Bruch) So what first set you on this path? Vanity! Really? Was it vanity? Absolutely. I was 32, 33, 34 years old, I'm watching a 22 year old usurp my set! Everybody's drooling over her, she just had this great energy. I wasn't angry or mad at her, I was just fascinated, I was like, "What happened to me from 22 like she was, to 32, that went from that to this? " I felt like a big old ugly blob. I had no joy, I had no joie de vivre, I was just this blob sitting there, and they said, "We can't shoot you, you just don't look good. " When I got home, as it happened in many moments in my life where I was in deep need, I was praying, I said, "If you bring me what I need I promise you that I will pay it forward and help other people. "

You can't believe all of the experiences I've had, Bobbi! Paulina Porizkova the other day said to me "Holy crap, I can't believe all the things that you've done and lived! I can't believe you had this life! " I have driven that fast Ferrari. I've been with princes and kings, I've done all that. But I've done it while I had to work the next day. And at that point, my deadline was 11 o'clock. You also became an award-winning Italian film star! I don't think a lot of people know that about you. It just happened that they liked my work. When I was modeling, I spoke fluent French, because the photographers like Patrick Demarchelier, Alex Chatelain spoke French. So you had to understand what they were saying. I worked a lot in Paris, I was the first and youngest face ever of Lancôme. I signed my contract by the time I was 18 or 19 years old. I learned Spanish in high school. For me, these were all Latin languages, so it was pretty easy. I got it, I understood it. It resonated with me. Then I started doing movies.

Anybody that tells you they're fully raw — that they never cheat — is full of garbage. We're human, and we get tempted, and we want to live and have fun, too. But, we're surrounded by raw food, so it's easier to get started than you might think. Instead of eating the cooked, processed olive oil, eat the cold, fresh olive oil. Instead of eating a baked apple, you eat an apple. Guacamole is raw. If you chop up avocados and put in tomatoes and stuff, it's raw. Cold doesn't [necessarily] mean raw. Raw means [someone] chopped it up and made it. I tell people, 'Don't be fearful of the language. Once you educate yourself and you understand the premise, the freedom and the control you have over your life and your health is without bounds. '" Photographed by Peter Ash Lee. Do you have any advice for people who are trying to eat really healthy or raw on a budget? "Absolutely. I mean, one of the things I did was write a book about how to make these foods for yourself at home, cheaply. You don't need a chef for this; all you need is a dehydrator.

It's amazing to me after so many years of lecturing about raw food, and teaching about nutrition, that people still are confused about what to eat. Let's start with the basics: if you give the body what it needs - the building blocks, clean building blocks - it can do almost anything. It can prevent disease, it can relieve disease, it can anti-age; it can also self-sufficiently prevent flu, colds, sinus infections, and headaches. All this I know from first-hand knowledge. People always say that as you get older, physical things get worse: that the body starts to break down. Well for me, 17 years ago I was worse than today. I was dealing with so many petty little health issues: constant sinus infections, constant sore throat, bloat, brittle hair and nails, terrible indigestion (acid reflux). And today I have none of these issues. 17 years ago I lived on Afrin, Tums, and Tylenol, to name a few of the over-the-counter drugs that I wouldn't leave home without. Today I take none. When people ask me how I did it, all I say is that a I changed my diet.
